Caramelized oats granola – Honey and maple flavored granola features almonds, cashews, apricots, cranberries, toasted cocoa nibs, and caramelized oats.
With Thanksgiving in the rear view mirror, the holiday season continues with Christmas, Christmas parties, and year end celebrations. I have so many desserts and dessert building blocks to share.

But first it’s time for a brunch recipe. A granola recipe with a dozen flavors, not the least of which are some caramelized oats. These oats are tossed in a piping hot sugar mixture and then baked until golden.

We start by melting butter and brown sugar in a saucepan, and allowing the mixture to boil for about a minute. Remove the pan from the heat and stir in the vanilla bean paste. Add oats to the hot sugar mixture and stir well to combine. Spread the oats in a sin Well coated, they are spread thin on a parchment lined sheet tray and baked until golden and crispy. The oats are cooled completely.
Cocoa nibs are toasted in a small skillet for a few minutes to release their earthy tones and help diminish their bitterness.

Old fashioned oats, sliced almonds and cashews are tossed in a mixture of melted butter, honey, maple syrup, and vanilla. The mix is spread on a parchment lined sheet tray and baked for 15 to 20 minutes. When cool, the oats mix is tossed with sliced dried apricots, dried cranberries, caramelized oats, and toasted cocoa nibs.

The result is a delicious fruit and nut granola with sweet slant, from the caramelized oat pieces.
Serves dual purpose. Cereal granola and dessert granola. Snack material. An excellent addition to your favorite yogurt or ice cream. Perfect by the handful.

Caramelized Oats Granola
Ingredients
Caramelized Oats:
- 60 grams unsalted butter (1/4 cup)
- 100 grams light brown sugar (1/2 cup)
- 5 grams vanilla bean paste or extract (1 teaspoon)
- 170 grams old fashioned oats (2 cups)
Old Fashioned Oats Granola:
- 340 grams old fashioned oats (4 cups)
- 110 grams sliced almonds (1 cup)
- 150 grams cashew pieces ( cup)
- 70 grams unsalted butter (1/3 cup)
- 100 grams honey (1/3 cup)
- 40 grams maple syrup (2 tablespoons)
- 5 grams vanilla bean paste or exrtact (1 teaspoon)
- 1/2 cup dried apricots, sliced
- 1/2 cup dried cranberries, chopped
- 1/4 cup cocoa nibs
Instructions
- Preheat oven to 325 F. Line 2 rimmed baking sheets with parchment paper.
Caramelized Oats
- Add unsalted butter and light brown sugar to a small saucepan. Heat over medium heat, stirring occasionally. Bring the mixture to a boil. Boil for 1 minute and remove from heat.
- Add vanill bean paste and old fashioned oats to sugar mixture. Stir in with wooden spoon.
- Spread the oats mixture in a single layer on 1 of the prepared baking sheets.
- Bake 10 minutes in preheated oven. Remove from oven. Stir the oats. Return to the oven for additional 7 to 8 minutes. Remove from oven and place on wire rack. Cool completely.
- Break into tiny pieces.
Old Fashioned Oats Granola:
- Add old fashioned oats, sliced almonds, and cashew pieces to mixing bowl. Stir to combine. Set aside.
- Add unsalted butter to small saucepan. Melt over low heat. Remove from stove top. Stir in honey, maple syrup, and vanilla bean paste.
- Pour honey butter mixture over oats mix. Stir until all oats and nuts are evenly coated.
- Spread granola mixture evenly on prepared baking sheet.
- Bake 10 minutes in preheated oven. Remove from oven. Stir the oats. Return to the oven for additional 7 to 8 minutes. Remove from oven and place on wire rack. Cool completely.
- Add cocoa nibs to small skillet. Toast over low heat for several minutes to crisp and bring out chocolate flavor.
- Transfer granola and caramelized oats to serving bowl. Toss with sliced dried apricots, dried cranberries and toasted cocoa nibs.
