Cherry Puree
Fresh cherries simmered with fresh lemon zest, and fresh lemon juice. Softened cherries processed smooth in food processor. Cherry puree simmered a few minutes longer to thicken.

- 450 grams fresh cherries (16 ounces OR 1 pound), pitted and roughly chopped
- 3 grams fresh lemon zest (1 teaspoon)
- 15 grams fresh lemon juice (1 tablespoon)
Add cherry pieces, fresh lemon zest, and fresh lemon juice to small saucepan.
Heat cherries over medium low heat for 5 to 10 minutes, or until juices begin to release and cherries soften.
Remove saucepan from heat and cool slightly. Rinse saucepan. Add cherries to food processor. Process until smooth. Strain cherries back into saucepan. Heat over low heat for a few minutes to cook off a bit more moisture.
Store cherry puree in an airtight container for up to a week.
